In a nut shell, what we do is provide the service of harvesting and processing beef and pork for the producers that sell their animals directly to consumers. We also can be the middle man for people that do not know any cattle or pork producers. Buying by the carcass offers tremendous savings to the consumer.
The value is always important but even more so is the fact that the consumer can have the beef or pork processed exactly how they want it. When you buy by the package at the grocery store, you are limited to what is available. There is no getting the steak a little thicker or having the roast the size you want. Customizing of product is appealing to consumers.
Everything that I have written could be done without USDA Inspection. We have chosen to be inspected! Any product done under inspection can be resold by the consumer. We have many customers that have us process beef and pork for them and then turn around and sell that meat again. So, we also provide the means for people to sell beef and pork that do not have the ability or desire to process it themselves. Being under USDA inspection creates a level of confidence to the consumer. We are required to do pathogen testing on our products, sample testing of our water and environmental testing for pathogens. This is not required in a retail exempt facility (Not inspected) or grocery store. We also have a USDA inspector on site at all times. His duties entail such things as inspecting the equipment for cleanliness and check to make sure the animals are healthy before harvesting.
Not everyone wants to buy in the large quantity, so we also offer our products by the retail package. We are able to offer products for retail that the average grocery store doesn’t. You won’t find a steak that has been graded Prime at many grocery stores. The retail part of our business gives our customers a chance to sample what we can offer them on a larger scale. It’s also the “fun” part of the business. I love to try different things. Not all of them work but we have come up with some different recipes that we are very proud of. As with the rest of the business, what makes us different in the retail segment is the quality of the products.
Our products are created from beginning to end here in Southwest Nebraska by people that live in Southwest Nebraska using beef and pork produced in Southwest Nebraska. I believe that is also key.
We have the best beef and pork to work with. It’s being processed by people that live right here. It’s not some production chain that is being done by workers doing a single task. What we do is a craft. It’s about pride and quality and it’s what every person at Willow Creek Meats is about. As cliché as that sounds, the mentality behind how something is produced will always determine the end product.
